Natural wine produced by nuns of the Cistercian Trappiste order in their breath taking walled property of 5 Ha northeast of Rome.

Like the good sisters themselves this is a wine of utter honesty, made entirely without temperature control, added yeast or any chemical substances. It is unfiltered and unfined, with minimal sulphur used at bottling only. Refreshing and without pretence, this is a wine of superb drinkability and grace, showing notes of smoke, green apple, fennel and honey. Enjoy with vegetarian cuisine or white meats.
